Sausage - Green Peas Masala
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 4 servings
- Chicken Sausage : 4 nos
- Onion : half (chopped
- Tomato : 1 no (small pieces
- Green peas : ½ glass (boiled / cooked
- Pepper powder : 1 tsp
- Green chilly : 1 nos
- Ginger : small piece
- Turmeric powder : a pinch
- Salt, to taste
Preparation
Step 1
Cut the sausages into small pieces as shown.
Step 2
Get chopped onion, tomato, green chilly and ginger.
Step 3
Cook in a little oil till the onion goes golden brown.
Step 4
Add a pinch of salt and turmeric powder to this.
Step 5
Add the sausages to this. Cook in a low flame for 10 minutes.
Step 6
Add the cooked green peas and pepper powder to this.
Step 7
Cook for a 10 minutes more.
Step 8
Serve while still hot.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
