Sausage Fry
Pan-fried until the edges go dark and crispy, this mixed fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 1 Pack Sausages
- 1 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 2 tsp Black pepper powder
- 1/2 tsp Salt
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
Cut the sausages into small pieces, preferably small cubes (1 cm thick) and wash properly in warm water.
Step 2
Remove all the water.
Step 3
In a vessel, add the sausage, chilly powder, turmeric, 1 tsp black pepper powder, salt and Stir everything together thoroughly.
Step 4
Let the sausage marinate in the masala for 10 - 15 minutes.
Step 5
Heat a round bottom pan/wok on low heat and add the oil.
Step 6
Wait till the oil is hot and then add the marinated sausages to the pan.
Step 7
Keep frying. Initially the sausage will swell up and change colour but keep frying (10 - 15 minutes) till the sausage becomes dark brown in colour.
Step 8
Next, add 1 tsp black pepper powder, Stir everything together thoroughly and remove.
Step 9
Lovely Kerala style sausage fry is ready to be served. Best suited as a snack along with drinks or as an accompaniment along with rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
