Saucy Fried Chicken
A robust chicken preparation where the meat absorbs a pounding of Kerala spices and slow-cooked onions. The curry leaves and coconut oil make it unmistakably from this part of the world.
Ingredientsfor 4 servings
- Chicken 1 kg
- Onion 2
- Garlic 8 cloves
- Ginger 1 inch piece
- Cornflour 2 table spoon
- Red chilly powder 2 tablespoon
- Green Chilly 6
- Tomato sauce 1 tablespoon
- Chilli sauce 1 tablespoon
- Soya sauce 1 tablespoon
- Sugar 1 teapoon
- Pepper powder 1 teaspoon
- Egg 1
- Salt
- Oil, to taste
Preparation
Step 1
First we have to make a mixture of cornflour powder with water and to this add egg,chilly powder and salt then mix it well.
Step 2
Then to this cornflour dip the chicken pieces and heat a pan add oil and when it gets hot slightly fry the chicken,no need of fry in hot oil.
Step 3
Then heat the same pan add oil if needed to this add the ginger, garlic and green chilly first and cook it, stirring well.
Step 4
Next, add onion to it it (onion should cut like square shaped not as too thin).
Step 5
Then to this add salt and red chilly powder all the sauces and cook well.
Step 6
Next, add the fried chicken to it,cook it, stirring well and add water and pepper powder to it as needed.
Step 7
Then close the pan allow it to gets boiled and keep it for 10 mint or 5 mint.
Step 8
Then when the dish is ready,transfer to serving dish.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
