Sambhaaram
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 2 servings
- 4 cup Buttermilk Blend homemade yoghurt and water. The readymade ones won`t be good for this, Moru
- 2 nos Green chillies
- Ginger A small piece
- 1 nos Lemon leaf — optional
- Curry leaves A, a few
- Salt, to taste
- Mint leaf(Pudhina) or Coriander leaf — for garnishing
Preparation
Step 1
Blend all the ingredients in a blender.
Step 2
Pour into a a tall glass with some ice.
Step 3
Garnish with a sprig of mint or coriander.
Step 4
Serve chilled.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
