Salmon Curry - North Kerala Style
A traditional Kerala curry where mixed simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 3 servings
- ¼ kg Salmon ½ lbs, Cube sizes — sliced
- 1 tsp Turmeric powder
- ½ Coconut Grated coconut
- 4 nos Green chillies sliced lengthwise
- 1 small Ginger slice it thin
- Salt, to taste
- 1½ tsp Chilli powder
- Curry leaves A, a few
- 1 small Tamarind nellikka size (Puli)
Preparation
Step 1
Grind coconut and turmeric powder to paste.
Step 2
Dilute tamarind with water.
Step 3
Add to it green chillies, ginger, chilli powder, salt and mix together.
Step 4
Add the above to a non-stick sautT pan.
Step 5
Add coconut paste and heat to boil.
Step 6
Add more water if needed.
Step 7
Once it boils, add salmon slices.
Step 8
Once the gravy becomes thick, add curry leaves and give it a good stir.
Step 9
Serve while still hot with White Rice or Kerala Rice.
Step 10
Recipe can be tried with King Fish (Naimeen) also.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
