Sadhya Avial
A medley of vegetables cut into long batons, simmered until just tender, and bound with a rough-ground coconut paste and a spoonful of yogurt. Avial is the centrepiece of the Kerala Sadya and arguably its most loved dish.
Ingredientsfor 5 servings
- Elephant yam(Chena
- Raw banana(Pachhakkai
- Drumsticks (Muringakkai)
- Carrot
- Beans
- White pumpkin
- 1/2 cup Yellow pumpkin
- 4 Spoon Curd
- 1/2 tsp Turmeric powder
- 8 nos Green chillies
- 1/2 tsp Cumin seeds (Jeerakam)
- 1/4 Of Coconut
- 4 sprig Curry leaves
- 2 Spoon Coconut oil
Preparation
Step 1
Cut all the vegetables into long pieces.
Step 2
Boil all the vegetables with a little water along with turmeric powder and 4 green chillies.
Step 3
When it starts to boil, add curd.
Step 4
Allow it to boil again.
Step 5
Grind togther grated coconut, tthe remaining green chillies and cumin seeds into a coarse form.
Step 6
When it becomes thick, add the ground mixture and Stir everything together thoroughly.
Step 7
Switch off the gas.
Step 8
Garnish with curry leaves on top.
Step 9
Pour a little cocunut oil too.
Step 10
