Roasted Fresh Okra | Bhindi Roast | Vendakka Roast
A culinary delight that brings together the goodness of okra with the aromatic blend of spices.
Ingredientsfor 4 servings
- 300 g Lady's Finger Sliced into rounds
- 3 tbsp Coconut Oil
- 1/2 tsp Mustard seeds
- 5 nos Garlic cloves — chopped
- 1 nos Onion — sliced
- 1 nos Tomato — chopped
- 1/2 tsp Turmeric powder
- 1/2 tsp Red chilly powder
- 1/4 tsp Cumin powder
- 1/4 tsp Garam masala powder
- Salt, to taste
- 3 nos. Green chilly — sliced
- 1/4 cup Grated coconut
- Curry leaves, a few
Preparation
Step 1
Heat oil in a pan, let the mustard seeds crackle and add chopped garlic.
Step 2
Next, add vendakka (slice the vendakka to rounds of ¼ inch thickness). cook it, stirring for 5 minutes on medium heat. Keeping the heat to medium high is very important to get that crisp without the slime.
Step 3
Then add sliced onion and Let it cook for 2 minutes.
Step 4
Now add chopped tomato and cook for 2 more minutes.
Step 5
Add all spice masala powders and Continue cooking for 2 to 3 minutes. Add required salt at this time.
Step 6
Finally add grated coconut, curry leaves and sliced green chilly. cook it, stirring for 2 more minutes and turn off the heat.
Step 7
Serve as a side dish with rice along with any curries.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
