Restaurent Style Uzhunnu Vada
Uzhunnu vada or urad dal vada is one of the kerala's fried snack specialities.urad dal or black gram is first soaked in water and then it is ground to a coarse paste along with other ingredients.the batter is made into a ball shape and a hole is mad.
Ingredientsfor 10 servings
- 11/2 cup Urad dal
- 1 Onion
- 2 Green chilly
- 1 tsp Pepper corn
- 1 tsp Ginger paste
- Coriander leaves, to taste
- Curry leaves, to taste
- Salt, to taste
- Oil 1 tsp white rice and urad dal for dry roast
- Water, to taste
Preparation
Step 1
Soak urad dal for overnight and grind it ina food processor or a grinder to a coarse paste.avoid adding water,if its hard to grind then add very little water.
Step 2
Chopp the onion,green chilly,curry leaves,coriander leaves,ginger and keep it ready.
Step 3
Dry roast the urad dal and white rice for one minute and grind it to get a fine paste.
Step 4
Pour the batter into a large bowl and add onion,green chilly,pepper corn,curry leaves,coriander leaves,ginger,dry roasted paste and salt to taste.Fold everything together gently,cover it and allow it to ferment for atleast one hour.
Step 5
PreHeat the oil in a vessel and wet hand in water,make a ball by using our dough,then dip your thumb in water and make a hole in the centre.shape all the vadas and fry it.
Step 6
Serve the hot uzhunnu vada with coconut chutney.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
