Rawa Laddu
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 1 cup Rawa
- 1 cup Sugar
- 2-3 nos Green elaichi
- 3-4 nos Cloves
- 1 tbsp Coconut — grated
- 2 tbsp Milk boiled
- 3 tbsp Ghee
Preparation
Step 1
Dry roast the rawa to pink color. Set aside and let it cool.
Step 2
Finely powder the sugar in the mixer along with the elaichi.
Step 3
Powder the grated coconut too in a mixer separately.
Step 4
Now powder the roasted rawa in the mixer & mix it with the sugar-elaichi powder.
Step 5
Set a kadai on the stove or pan, heat the ghee.
Step 6
Add the rawa-sugar mix to it along with the cloves and powdered coconut.
Step 7
Cook it, stirring without taking the hand. The mixture will become dry in appearance.
Step 8
It¦s time to add the milk, once milk is poured the mixture will turn soft and the ghee will start appear on top.
Step 9
Switch off the gas and remove from stove.
Step 10
Make small laddus out of it without wasting time.

Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
