Rava(Semolina) Undda
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 4 servings
- 1 cup Rice powder
- 2 cup Semolina/Rawa
- 1 tsp Cardamom powder podi (Elakka)
- 1 cup Sugar
- 2 tsp Dates — chopped
- Dry grapes, a few
- 3 tsp Ghee
- 1/2 cup Coconut — grated
Preparation
Step 1
For preparing rava undda, first fry grapes and dates in some ghee.
Step 2
Roast rava, till color changes. Add rice powder to it and roast again.
Step 3
Add ghee, coconut, sugar and cardamom powder. Add fried dates and grapes.
Step 4
Knead them well. Make balls out of it.
Step 5
Rava undda is ready.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
