Rava Pulav
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 500 g Semolina Rava
- 300 ml Ghee
- 2-3 nos Carrot
- 100 g Beans
- 1 nos Potato big
- 2-3 Florets Cauliflower
- 3 Leaves Cabbage
- 100 g Green peas
- 5 nos Onion big
- 5-6 nos Green chillies
- Ginger A small piece
- 5-6 Cloves Garlic
- Curry leaves, a few
- 4-5 Springs Coriander leaves
- 1 tsp Garam masala
- Salt, to taste
Preparation
Step 1
For preparing rava pulav, slice the vegetables: carrot, beans, potato, cauliflower, cabbage, onion and green chillies into small pieces.
Step 2
Cut coriander leaves finely.
Step 3
Smash ginger and garlic.
Step 4
Steam and cook all the vegetables including green peas (Add a pinch salt).
Step 5
Fry rava in ghee. Add double the quantity of boiling water and cook well adding salt.
Step 6
In another kadai, fry onion, garlic, green chillies, curry leaves and ginger. cook well adding garam masala.
Step 7
To this add steamed vegetables and cooked rava and Stir everything together thoroughly.
Step 8
Add extra ghee if any and sprinkle coriander leaves.
Step 9
Rava pulav is ready. Serve with any salad as side-dish.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
