Rava Pudding
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 1 litre Milk
- 1/4 kg Rava sooji
- 1/4 cup Sugar or
- 11/2 tbsp Butter
- 6 nos Cardamom — crushed
- 6 tbsp Sugar
- 2 tbsp Water
Preparation
Step 1
Place a pan on the stove and add sugar and water.
Step 2
Place it on high heat and boil.
Step 3
At the same time take a container with flat base (steel/glass) and brush the base with some buttter.
Step 4
When the sugar solution turns brown(not golden brown),caramel syrup is ready.
Step 5
Pour the caramel into the container.
Step 6
Now take a milk pan, pour milk and then add ingredients 2 to 5.
Step 7
Place the pan on low heat and start stirring the mix continuously,so that no lumps are formed.
Step 8
Cook till the mix becomes thick (in the form of paste).
Step 9
Take it off the heat.
Step 10
Pour the cooked pudding mix on to the container with caramel.
Step 11
Make some more caramel and pour over the mix if you want.
Step 12
Let it cool and then keep refreigerated(about 5 hrs).
Step 13
Serve it on a plate upside down.
Step 14
Garnish with nuts n raisins.
Tip
