Rava Laddoo
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 1 cup Semolina Rava/Sooji
- 3/4 cup Sugar — powdered
- 4 nos Cardamom — powdered (Elakka)
- 1/2 cup Coconut — grated
- 1 cup Milk
- 2 tsp Ghee
- Raisins and cashews(fried in ghee, as needed
Preparation
Step 1
Heat ghee in a pan or a kadai.
Step 2
Fry rava.
Step 3
Grind it to a coarse powder.
Step 4
Mix together the fried rava, coconut, sugar, cardamom powder, raisins and cashews in a plate.
Step 5
Boil milk.
Step 6
Add milk to rava, 1 tbsp at a time.
Step 7
Stir everything together thoroughly some rava with hands and roll into balls.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
