Ragi Dosa
Crispy on the edges, soft in the middle — this ragi dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 4 servings
- 1 cup Ragi flour
- 4-5 nos Green chillies
- 2 tsp Rice flour
- Salt, to taste
- Ghee
Preparation
Step 1
Mix together both the flours, chillies and salt.
Step 2
Add water and make it into a dosa batter.
Step 3
Pour 1 ladle full of the above batter onto a hot dosa tawa.
Step 4
When Ragi Dosa is brown in colour, remove it.
Step 5
Ragi Dosa is ready.
Step 6
Serve Ragi Dosa with hot chilly chutney or onion chutney.
Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
