Quickie Creme Caramel
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 5 servings
- 3 tbsp Sugar
- 1 tbsp Water
- 500 ml Milk or 2 cups milk + 1/2 cup condensed milk
- 5 nos Eggs
- 1 cup Sugar
- 1 nos Cardamom (Elakka)
Preparation
Step 1
Grease an aluminium mould (or non stick) with butter or ghee.
Step 2
Spread the 3 tbsp of sugar evenly on its base.
Step 3
Heat the mould.
Step 4
When the sugar starts turning brown, add 1 tbsp water and heat for a few seconds.
Step 5
Keep the mould aside.
Step 6
Add the milk, eggs, sugar, and cardamom into a mixie and blend well till frothy.
Step 7
Strain the custard through a strainer and pour into the mould.
Step 8
Steam for 5 - 10 minutes or until set.
Step 9
The steamer should have started steaming before placing the custard.
Step 10
Chill in the freezer for about 10 minutes and then move it to the fridge.
Step 11
Turn the pudding into a serving plate.
Step 12
Decorate it with cherries or caramelised cashew nuts.
Step 13
This is a very easy dessert and a definite success.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
