Quick Tomato Rice Recipe
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 2 servings
- 11/2 cup Basmati rice washed and — drained
- 3 nos Tomato medium sized
- 2 nos Onion medium sized
- 2 nos Green chillies
- 3 small Cinnamon (Karugapatta)
- 5 nos Cloves (Grambu)
- 5 nos Black pepper — crushed
- 11/2 tbsp Red chilly powder
- Turmeric powder A pinch
- 1/2 tbsp Black pepper powder
- 2-3 tbsp Ghee
- 3/4 tbsp Garam masala
- Salt, to taste
- Coriander leaves, a few
- Lemon slices, to taste
- Capsicum — optional
Preparation
Step 1
Chop tomatoes, onion and green chillies.
Step 2
Get a pressure cooker and cook cinnamon, cloves and crushed black pepper in hot oil/ghee for less than one minute.
Step 3
Next, add chopped onions and cook until it turns transparent.
Step 4
Once done, add chilly powder, garam masala and black pepper powder and mix thoroughly but only in a low flame.
Step 5
Next, add chopped tomato and cook thoroughly until tomatoes blends completely.
Step 6
Stir in basmati rice. At this stage you can add the remaining ghee and cook for approximately 5 minutes.
Step 7
Once done add 3 cups of water(ratio is like double the quantity of basmati rice) plus required quantity of salt.
Step 8
Now close the lid and increase the flame to high.
Step 9
When the first whistle comes, lower the flame and wait for the second.
Step 10
After the second whistle, remove the cooker from the flame.
Step 11
Once the pressure is released, you can transfer the rice to a serving dish and it can be garnished with coriander leaves, capsicum and lemon slices if u wish.
Step 12
Note: 1)You can vary the quantity of ghee and masalas depending on your taste.
Step 13
Make sure to follow the quantity of water as mentioned.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
