Quick Sambhar
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 5 servings
- 1/2 cup Yellow lentils
- 1/2 A Tamarind
- 3 nos Lady`s Finger — chopped
- 7 nos Cucumber — finely chopped
- 1 nos Tomato — chopped
- 1 nos Drum stick — chopped
- 1 nos Onion — chopped
- 1/4 Of Carrot
- 1 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 2 tsp Red chilly powder
- 1/2 tsp Fenugreek powder
- 1/4 tsp Asafoetida powder
- 4 Springs Coriander leaves — chopped
- Salt, to taste
- 3 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- 2 nos Dried Red chillies broken
- 2 Springs Curry leaves
Preparation
Step 1
For preparing quick sambhar, soak tamarind in water and set aside for sometime. After that extract tamarind juice.
Step 2
Cook the lentils along with turmeric powder and salt in a pressure cooker with 4 cups water.
Step 3
Add the veggies: ladies finger's, drumstick, cucumber, tomato, onion and carrot to this cooker. Cook it till one whistle is heard.
Step 4
Heat a kadai, add coriander powder, turmeric powder, red chilly powder and fenugreek powder. Keep stirring for 2 minutes.
Step 5
Pour in the tamarind juice and stir for one minute.
Step 6
Add this mix to cooker(where lentils and vegetables are there).
Step 7
Switch off flame and add asafoetida powder and coriander leaves.
Step 8
Get a fry pan add oil, let the mustard seeds crackle, add dried chillies and curry leaves. Pour this into cooker.
Step 9
Quick sambhar is ready. Serve it hot.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
