Quick And Easy Vegetable Kuruma

Ingredientsfor 4 servings
- Vegetables : 1 cup
- Green chilly : 3 nos
- Onion : ½ cup
- Mustard : 2 tsp
- Pepper powder : 3 tsp
- Coconut powder : 1 tsp
- Salt, to taste
- Oil : 3 tsp
- Curry leaves :1 spring
Preparation

Cook the vegetables using salt and pepper powder.

When it gets cooked add the coconut powder to it and give it a good stir.

Then close the pan for 5 minutes and then off the flame.

Then heat another pan add oil in it, and then add mustard when it gets hot.

Next, add onion and curry leaves to it.

Cook it, stirring well and pour this to the cooked vegetable.
Step 8
Serve while still hot with chappathi.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
