Quail Eggs Sambal
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 6 servings
- 12 nos Quail eggs boiled and shelled
- 1/2 piece Red onion chopped fine
- 2 tsp Garlic — minced
- 1 tsp Curry powder
- 1 tbsp Kashmiri chilly powder
- 1/4 tsp Turmeric powder
- 4 nos Tomatoes seeded and — diced
- Mint leaves — for garnishing
- Salt, to taste
- Oil — for cooking
Preparation
Step 1
Add oil to a heated pan, add the quail eggs and fry till crisp on the outside. Remove and transfer to a plate.
Step 2
Add a little more oil and stir the onions and garlic for about 1 minute.
Step 3
Make paste with the chilly and curry powder and add gradually to the pan and stir.
Step 4
When the spices turn fragrant, slide in diced tomatoes and Fold everything together gently with the masala.
Step 5
Bring the heat down to a simmer and cover the pan with a lid. Cook till the tomatoes are soft and blended with the masala.
Step 6
Slide in the quail eggs and simmer for 2 minutes. : - Add a little water, if the gravy turns dry.
Step 7
Check for seasoning and Garnish with mint leaves.

Quail Eggs Sambal is ready!
Step 9
Serve the Quail Eggs Sambal in hot!
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
