Pumpkin(Kumbalam) Thoran
Simple, honest, and on every Kerala lunch plate — pumpkin thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 2 servings
- 2 cup Pumpkin peeled and finely chopped, Kumbalam
- 1 cup Carrot — chopped
- Cow pea Achinga payaru) - 1/2 cup(chopped in 1/2 inch
- Salt, to taste
- 3/4 cup Coconut
Preparation
Step 1
For preparing pumpkin(kumbalam) thoran, mix kumbalam, carrot, achinga payaru and salt by hand.
Step 2
Next, add the coconut and mix again.
Step 3
Cook in low flame with a covered lid until done. Remove the lid and stir fry until dry. Kumbalam thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
