Pumpkin-Mathanga Sambar
A hearty lentil stew loaded with vegetables, tangy tamarind, and a freshly ground spice paste — Kerala sambar is thicker and more coconut-forward than versions from other states. It gets ladled generously over rice at every meal.
Ingredientsfor 3 servings
- 1/2 cup Red gram Thuvara daal
- 1/2 cup Onion — chopped
- 1 cup Pumpkin — cut into small squares
- 3 nos Green chillies split
- Curry leaves, a few
- Salt, to taste
- 1/4 cup Tamarind water
- 2 tbsp Sambar powder
- 1 tbsp Oil
- 1/4 tsp Mustard seeds
- 3 nos Red chillies
Preparation
Step 1
For preparing mathanga sambar, first cook daal in 3 cups of water.
Step 2
Add onion, chopped pumpkin, green chillies, curry leaves, tamarind water, sambar powder and salt.
Step 3
Cook for some time until the pumpkin has softened. take it off the heat.
Step 4
Fry mustard seeds and red chilly in oil and pour it into mathanga sambar.
Step 5
The Mathanga Sambar with rice.
Tip
Add the tempering last and let the sambar rest for 5 minutes after. The flavours need a moment to settle.
