Pumpkin-Khaju(Cashew Nuts) Fry
Pan-fried until the edges go dark and crispy, this pumpkin fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 500 g Pumpkin skinned and deseeded, Mathanga
- Cashewnuts A handful
- 1/2 tbsp Oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds (Jeerakam)
- 3 - Garlic pods — minced
- Coriander
- Curry leaves A, a few
- 3 - Red chillies (Kollamulaku)
- 1 tsp Turmeric powder
- 1 - Chilly powder
- 1/2 cup Milk
- Salt, to taste
Preparation
Step 1
Grate the pumpkin and set aside.
Step 2
Warm the oil in a pan or a kadai.
Step 3
Let the mustard seeds crackle and cumin seeds.
Step 4
Add curry leaves, minced garlic, red chillies, coriander and cashewnuts and cook, stirring often, for a few minutes, till the nuts are slightly brown.
Step 5
Add the grated pumpkin and cook for about 5 minutes.
Step 6
Once the oil starts to leave, add turmeric powder, chilly powder and milk.
Step 7
Simmer it covered with a lid for about 10 minutes, until the water is fully dried up.
Step 8
Add salt and fry for 1 - 2 minutes.
Step 9
Goes well with both rotis and rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
