Puliakuthikkari - Brahmin Special
Vegetables are cooked in tamarind water and seasoned with home made curry powders.
Ingredientsfor 6 servings
- 100 g Ladies finger
- 100 g Brinjal
- 1 nos Raw banana
- 5 nos Pollamulagu
- 1 tsp Turmeric powder
- Tamarind lemon sized
- 2 tbsp Raw rice
- 2 nos Red chillies
- 2 tsp Mustard seeds
- 2 tsp Urad dal
- 2 tsp Coconut oil
- Salt, to taste
Preparation
Step 1
For preparing puliakuthikkari - brahmin special, cut and wash items from 1 to 4. Just sprinkle sufficient quantity of water and boil(items like ladies finger gets quickly boiled). Add turmeric powder and salt while cooking.
Step 2
Soak tamarind in water and squeeze it out. Tamarind water must be very thick(take lesser quantity of water for making it thicker). Add this tamarind water to the first step.
Step 3
Fry raw rice and red chilly and grind it. Just grind it and do not make it very powdery.
Step 4
Add the ground mixture to the 2 step and cook for sometime.
Step 5
Fry mustard seeds and urud dal in coconut oil and add to the mixture.
Step 6
Puliakkuthikkari - brahmin special recipe, is ready. This can be used as side dish for molagootal.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
