Pudina Rice
Pudina rice or Mint pulav is a refreshing dish made from mint leaves. Mint is a herb which is widely used in Indian Cooking. Mint or Pudina has been used in healing remedies for many centuries.
Ingredientsfor 2 servings
- 1 cup Basmati Rice
- 2 ½ Pudina leaves without stems
- 3 Green Chillies
- ½ cup Onion — finely chopped
- 2 tsp Oil
- 1 tsp Mustard seeds
- 1 tsp Urad dal
- Salt, to taste
- To Garnish
- 2 tsp Ghee
- 1 ½ Cashew nuts
- 1 ½ Kissmiss
- Tomato sliced into rings
Preparation
Step 1
Cook the rice and allow it to cool down.
Step 2
Wash the pudina leaves and grind them along with the green chillies and tamarind into a smooth paste.
Step 3
Heat the oil in a non stick pan on medium heat; add the mustard seeds and allow it to crackle. Stir in the urad dal and roast it until it turns light golden. Add the onions and cook until the onions turn translucent. Now add the ground pudina mixture and salt. Give it a stir and let it Continue cooking for 2 to 3 minutes until the mixture turns a little thick.
Step 4
Turn off the heat and finally stir in the cooked rice to this mixture until well combined. Fry cashews and kissmiss in ghee till they goes golden brown. Garnish pudina rice with fried cashews,kissmiss and sliced tomato rings. Serve hot with raita, papad and green chutney.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
