Pressure Cooker Coconut Rice
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 4 servings
- 1 cup Matta rice — soaked in water for 20 minutes
- 2 nos Cardamom
- 2 nos Cinnamon
- 2 nos Cloves
- 1 nos Onion small — finely sliced
- Turmeric powder _ 1 / 2 tsp
- 1 / Coriander powder
- 1 / Fennel powder
- 2 Pods Garlic
- 2 cup Coconut milk
- Curry leaves few
- 1 tbsp Ghee/coconut oil
- Salt, to taste
Preparation
Step 1
Heat ghee/ coconut oil in a pressure cooker and fry cardamom,cloves and cinnamon for a few seconds.Add onion and cook until it has softened.
Step 2
Pour coconut milk into the cooker, add turmeric powder,coriander powder,fennel powder,garlic,curry leaves and salt.give it a good stir, then allow to boil.
Step 3
Add rice,close the cooker and cook in high flame till the first whistle comes out.Then cook in low flame for 10-15 minutes.
Step 4
It is ready to serve.Serve hot with Beef /Mutton /Chicken curry.It is also good with raitas,pickle and pappad.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
