Prawns With Cashew
Fresh prawn cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 3 servings
- Prawns(cleaned and de veined) - 1/2 cup, cleaned and de
- 6 nos Cashew nuts
- 2 tsp Fresh butter
- 1 tsp All purpose flour Maida
- 1 tbsp Milk
- 1/4 cup Curd
- 1/2 tsp Poppy seeds Kashakasha
- 1/2 tsp Sesame seeds Ellu
- 5 nos Shallots — finely sliced (Kunjulli)
- 3 Cloves Garlic — crushed
- 2 nos Green chillies chopped round
- 1/4 tsp Pepper powder
- Coriander leaves, a few
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing prawns with cashew, first marinate prawns with curd, required salt and pepper powder for a few minutes. Set aside.
Step 2
Grind together cashew nuts, poppy seeds, sesame seeds and coriander leaves to a fine paste. Keep the ground cashew paste aside.
Step 3
Get a flat bottomed pan and heat fresh butter. Add maida and roast in low fire. Add milk and stir continuously so that no lumps are formed.
Step 4
Add previously ground cashew paste. cook for a few seconds and remove pan from fire.
Step 5
Get another pan and heat oil. Add crushed garlic, sliced shallots and green chillies. cook until shallots are golden in color.
Step 6
Add cashew mixture and cook until oil accumulates on top.
Step 7
Add marinated prawns and cook in low fire till prawns are done.
Step 8
Prawns with cashew is ready and garnish with chopped coriander leaves. Serve hot.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
