Prawns Roast With Coconut Milk
Prawns Roast with Coconut Milk is a classic Kerala-style seafood dish that brings together the rich flavors of fresh prawns, aromatic spices, and creamy coconut milk.
Ingredientsfor 4 servings
- 200 g Prawns
- 3 tbsp Coconut oil
- Curry leaves, a few
- 4 nos Shallots
- Piece Ginger
- 4 nos Garlic
- 1/2 tsp Pepper corns
- 1 nos Dried red chilly
- 2-3 nos Green chillies
- 1 nos Onion Large
- 1 nos Tomato Small
- 1/2 tsp Turmeric powder
- 1 tsp Coriander powder
- 1/4 tsp Garam masala powder
- 3/4 cup Coconut milk
- Coriander leaves — chopped
- Salt, to taste
Preparation
Step 1
Wash and clean the prawns. Mix together 1 tsp red chilly powder, 1/4 tsp turmeric powder and salt to taste.
Step 2
Pour oil into a pan and heat it and fry the prawns on medium heat.
Step 3
Turn the other side and fry.
Step 4
Get a grinder and add shallots, pepper corns, garlic, ginger, dried red chilly and crush it.
Step 5
Add the crushed mixture and some curry leaves in the same pan that we have fried the prawns.
Step 6
Cook for one minute, add little oil if needed.
Step 7
Add sliced onion and cook until the onion turn transparent or lightly browned.
Step 8
Stir in coriander powder, turmeric powder and garam masala powder. stir for a few seconds.
Step 9
Add chopped tomato and cook until soft.
Step 10
Add salt and Fold everything together gently.
Step 11
Stir in the fried prawns.
Step 12
Cook for 1 minute.
Step 13
Pour the thick coconut milk and Fold everything together gently. Cook until the gravy thickens.
Step 14
Finally add some chopped coriander leaves and take it off the heat.
Step 15
Serve alongside chapati parotta etc.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
