Prawns Mix Masala Fry
A proper Kerala fry — chicken tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 5 servings
- 1 kg Frozen/Fresh Prawns Medium/Tiger Prawns
- 1 piece Ginger medium
- 6 - Garlic pods cut lengthwise
- 1 nos Onion large
- 3 - Green chillies
- 10 - Curry leaves
- Chicken/Mutton masala powder
- Pepper powder, to taste
- Garam masala — optional
- Food coloring Red
- Oil
- Salt, to taste
Preparation
Step 1
Pour oil into a pan and heat it or a kadai.
Step 2
Add curry leaves, chopped onions, slit green chillies and fry, till half cooked.
Step 3
Add salt, ginger and garlic and fry, till brown.
Step 4
Add garam masala (optional), chicken/mutton masala powder, pepper powder and food color and fry well, till the raw taste goes off.
Step 5
Add prawns.
Step 6
Add very little water, if needed.
Step 7
Keep stirring at regular intervals, to avoid getting it burnt at the bottom of the pan.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
