Prawns Coconut Fry
A proper Kerala fry — prawn tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 2 Lb Prawns Chemmeen
- 1 tsp Chilly powder
- 2 pinch Turmeric powder
- 2 - Kukum star Kodampuli
- Salt, to taste
- Ginger A small piece
- 1 - Green chillies
- 5 - Curry leaves
- 3 - Garlic pods
- 1/2 Of Coconut — grated
- 1 nos Onion big
- 5 - Garlic pods
- 1 - Chillies
- Ginger A small piece
- 1 tbsp Coriander powder
- 1/2 tbsp Chilly powder
Preparation
Step 1
Clean the prawns and smear them with chilly powder, turmeric powder and salt. Set aside for 30 minutes.
Step 2
Crush chillies, garlic and ginger.
Step 3
Add them along with the prawns in a vessel.
Step 4
Pour water along with kukum star, till it just covers the contents and Put the lid on and cook for 30 or 45 minutes or till the prawns are cooked.
Step 5
Chop all the ingredients for masala except coconut.
Step 6
Fry them till they become golden brown.
Step 7
Add coriander powder and chilly powder and stir for a minute.
Step 8
Add coconut and fry till it becomes brown.
Step 9
Add prawns and fry for 5 or 10 minutes.
Step 10
Goes well with rice.
Step 11
The amount of ingredients can be varied as per your taste.
Step 12
Reduce the amount of chilly powder if u want a mild taste. But it tastes better when its spicy.
Step 13
You can also try adding garam masala.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
