Prawns Ada
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 3 servings
- 1/2 kg Prawn
- 1 tbsp Chilly powder
- 1/2 tsp Turmeric powder
- Salt, to taste
- Oil To fry
- 2 nos Onion — chopped
- Coconut oil, to taste
- 1/2 Of Coconut — grated
- 4 nos Red onion — chopped
- 1 tsp Fennel seeds (Perumjeerakam)
- Curry leaves, a few
- 2 cup Wheat flour
- Water, to taste
- Salt, to taste
- 1 cup Coconut milk
Preparation
Step 1
For preparing prawns ada, marinate the cleaned prawns with chilly powder, turmeric powder and salt. Cook it well and set aside.
Step 2
When the prawns are done, pan-fry it in oil.
Step 3
Cut the fried prawn in 4-5 pieces and set aside.
Step 4
Grind the ingredients:coconut, red onion, fennel seeds and little curry leaves without adding water to make a paste.
Step 5
Fry onion in coconut oil and add the ground paste to it and fry again.
Step 6
Add the chopped prawns and curry leaves and mix all the ingredients well.
Step 7
Keep the masala aside.
Step 8
Mix all the ingredients for the ada to make a thick paste.(see not to add water too much).
Step 9
Press the thick paste to a medium thickness in a banana leaf.
Step 10
Spread the prawn masala on top of the ada.
Step 11
In another banana leaf press the paste again in same thickness and size as before.
Step 12
Place this ada carefully above the spread masala.
Step 13
Repeat the process again making 2 layers of masala.
Step 14
Fill a steam vessel with half of water and place the stand above it.when the water boils place the ada along with the banana leaf on the stand and cover the vessel with a lid.
Step 15
Steam cook the ada well.
Step 16
Prawns ada is ready. Serve hot.

Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
