Prawn With Potato Stir Fry
Slow-roasted in coconut oil with a generous hand of spices, this prawn fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 2 servings
- 1 cup Prawns cleaned and de-veined
- 1/2 cup Onion — finely sliced
- 1/4 cup Tomato — chopped
- 1/2 cup Potato sliced lengthwise into thin fingers
- 1 inch Ginger — minced
- 1/2 Dsp Garlic whole
- 5 nos Dry red chillies
- Turmeric powder A pinch
- 1 Dsp Vinegar
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Place a pan on the stove and put the cleaned prawns, a little water, some salt, vinegar and minced ginger.
Step 2
Cook in low fire until the prawns are cooked and the water evaporates completely.
Step 3
Remove the seeds and grind the skin of red chillies along with garlic to a fine paste.
Step 4
Tan a pan and pour some oil. Fry the onions until crisp and golden. Remove from fire.
Step 5
Next, fry the potato pieces until crisp and remove from fire.
Step 6
In the same oil, cook the ground red chilly masala. Add the cooked prawns and cook well.
Step 7
Add chopped tomatoes and stir for sometime.
Step 8
Add half of the fried onions, a pinch of sugar and required salt.
Step 9
Mix and remove the contents to serving dish. Decorate the top with remaining fried onions and fried potato pieces.
Step 10
And nutritious prawn with potato stir fry is ready and serve hot.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
