Prawn Roast Kerala Style Delicious
Pan-fried until the edges go dark and crispy, this prawn fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 800 g King prawns
- 2 nos Onion medium size
- 2 tbsp Cooking oil
- 2 nos Tomatoes
- 5 Cloves Garlics
- 1 tsp Ginger
- 10 nos Curry leaves
- 6 nos Green chillies
- 1/2 tsp Turmeric
- 1/2 tsp Chilli powder
- 2 tsp Coriander powder
- 1 tsp Garam masala
- 1/2 tsp Pepper — ground
- Salt, to taste
- Coriander leaves to garnish
Preparation
Step 1
For preparing the Prawn dish, first fry the onions in oil until brown and soft.
Step 2
Add ginger, garlic, curry leaves and stir to Stir everything together thoroughly.
Step 3
Add turmeric, chilli powder, coriander powder and garam masala and stir until roasted smell comes from masala.
Step 4
Add chopped tomatoes and Stir everything together thoroughly until it becomes a paste.
Step 5
Add green chillies and pepper and then the prawns.
Step 6
Stir everything together thoroughly and cook in low flame about 15-20 minute and then keep on stirring until the prawns are well coated with the masala and dry. Keep covered in low flame if cooking is required for the prawns.
Step 7
Garnish the dish with coriander leaves. You can relish the prawn dish with your loved ones. During festive occasions this is an apt dish.the dish.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
