Prawn-Beans Thoran
The everyday side dish that Kerala never tires of. Prawn is shredded fine, tossed with coconut and spices, and cooked just enough to soften without losing its bite.
Ingredientsfor 4 servings
- 300 g Small prawns
- 200 g French beans — cut into 1 inch length pieces
- 1 nos Onion chopped fine, large
- 2 cm Ginger — chopped
- 2 nos Garlic pods — crushed
- 3 nos Green chillies — finely chopped
- 1/4 cup Coconut — grated
- 1 tsp Coriander powder
- 1/4 Tsp[ ] Cumin powder — optional (Jeerakam)
- 2 tbsp Oil
- Salt, to taste
- 1 tsp Mustard seeds
- Curry leaves A, a few
Preparation
Step 1
Heat the oil in pan.
Step 2
Add mustard seeds and when they allow to crackle, add curry leaves.
Step 3
Add onion, ginger and garlic and sauté, till it starts to change colour.
Step 4
Add the prawns and green chillies. Fry for sometime.
Step 5
Add beans and fry further.
Step 6
Add 2 tbsp of water and cover the pan and cook.
Step 7
Handmix grated coconut with coriander powder, cumin powder and a little water(to soften).
Step 8
Add this to the pan.
Step 9
Put the lid on and cook for some more time. Stir everything together thoroughly.
Tip
This same method works for almost any vegetable: beans, beetroot, carrot, raw banana — swap the main vegetable and keep everything else the same.
