Pottu Vellari (Blonde Cucumber)Juice

Ingredientsfor 4 servings
- 250 g Pottuvellari
- 2 cup Coconut milk
- 1 cup Sugar as required/jaggery syrup
- 1 Cardamom — optional
Preparation
Step 1
The main ingredient - Pottuvellari.
Step 2
Peel the skin and remove the seeds of the cucumber,cut into small pieces and set aside.
Step 3
Blend the cucumber with sugar,(here I used jaggery syrup)coconut milk and cardamom in a blender very well.
Step 4
Pour the pottuvellari juice to a serving glass.Chill it.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
