Pottalam Chicken Biriyani | Banana Leaf Chicken Biriyani | Kizhi Chicken Biriyani
A unique recipe in Kerala. This biriyani is quite similar to styled malabar biriyani. Cooked chicken is combined with steamed rice, boiled egg, coconut chamanthi and finally wrapped in a banana leaf and steamed in a steamer.
Ingredientsfor 4 servings
- 1/2 kg Chicken
- 2 cup Basmathi rice
- 4 nos Onions — sliced
- 2 nos Tomatoes
- 2 nos Green chili
- Mint and coriander leaves Handful
- Cloves, cinnamon, cardamom 2 each
- Salt As per taste
- Ghee and oil 2 tbsp
- 3/4 cup Curd
- 1 tbsp Ginger garlic paste
- 1 tsp Red chilli powder
- 3/4 tsp Kashmiri chilli powder
- 1/4 tsp Garam masala
- 1/2 tsp Biriyani masala
- 1 tsp Salt
- 2 tsp Oil
Preparation
Step 1
In a bow, add curd and ginger garlic paste which is mentioned in marination.
Step 2
Stir in all the other ingredients which is mentioned in marination and Stir everything together thoroughly.
Step 3
Next add chicken pieces and Stir everything together thoroughly. Add little mint and coriander leaves.
Step 4
Stir in oil and rest for about 30 minutes.
Step 5
Set a pan on the stove add 2 litres of water and add spices which are mentioned above: cloves, cinnamon and cardamon with few few mint and coriander leaves. Add required salt and boil water.
Step 6
After water boils, add soaked rice and few drops of oil. Cook till it is 3/4 th cooked.
Step 7
Drain the water completely and keep separate.
Step 8
In a pressure pan add oil and fry 2 thinly sliced onion and set aside. In the same pan add 2 thinly onions again and cook well.
Step 9
Next add green chilli and tomato, cook well.
Step 10
Stir in marinated chicken along with masala and cook for about 10 minutes or until done.
Step 11
Into the pressure cooker now add one layer of steamed rice and spread fried onion on top.
Step 12
Next add second layer of rice on top and spread some mint and coriander. Add few drops of colours(turmeric powder mixed in some water) and ghee. Next Let it cook for 10 minutes.
Step 13
Now take banana leaf and heat slightly. For reference.
Step 14
Now chicken biriyani has been almost done. Open the lid.
Step 15
In mean time boil eggs.
Step 16
Now keep two to three portion of biriyani in a banana leaf.
Step 17
Next add egg and chamanthi. Here i didn't keep chamanthi. And tie the bag with thread.
Step 18
Now steam this banana bag in steamer for about 5 minutes to absorb the flavors fully.
Step 19
Now it's ready to serve pottalam chicken biriyani or kizhi chicken biriyani.
Step 20
The delicious and wholesome biriyani.
Tip
Seal the pot with dough or a tight-fitting lid during dum cooking. No steam should escape, or the rice will dry out.
