Potatoes N Pineapple
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 2 servings
- 1 nos Onion sliced lengthwise
- 1 nos Potato
- 2 tbsp Oil
- 2 nos Canned Pineapple slices
- 4 - Green chillies — thinly sliced
- Salt, to taste
Preparation
Step 1
Peel the potatoes and cut into small cubes.
Step 2
Place these cubes in the microwave for about 4 minutes.
Step 3
Cooking time may vary depending on your oven wattage. Basically, the potatoes should be soft.
Step 4
Cube the pineapple slices.
Step 5
Pour oil into a pan and heat it.
Step 6
Put in the green chillies.
Step 7
Toss in the onions and cook until translucent.
Step 8
Add salt, the potato and pineapple cubes.
Step 9
Cook for about 5 minutes on medium heat. Serve hot.
