Potato Sandwich
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 3 servings
- 1 Loaf Fresh Bread
- 2 nos Potatoes — finely chopped
- 1 nos Onion — finely chopped
- 2 tsp Oil
- Salt, to taste
- Chilly powder, to taste
- 1 tsp Cumin powder (Jeerakam)
- Coriander leaves — for garnishing
- 1 Per Cheese Singles — optional
- Margarine As spread
Preparation
Step 1
Set a pan over medium heat and pour in the oil.
Step 2
Add onions and fry.
Step 3
Reduce the flame and add potatoes and salt.
Step 4
Cover the pan and cook for few minutes. Keep stirring in between to prevent from sticking.
Step 5
Sprinkle water, if too dry.
Step 6
Add chilly powder and cumin powder, garnish with coriander leaves & allow it it cool.
Step 7
Get a slice and spread with margarine. On another slice, scoop in potato mixture. Press with cheese single and press the two slices together.
Tip
Good shallots are the backbone of Kerala cooking. They should be small, pink-purple, and strong-smelling. Large onions can substitute, but the flavour will be different.
