Potato Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 3 servings
- 3 nos Potato — cut into medium cubes
- 11/2 glass Rice washed and drained, white rice/basmati rice
- 3 Glasses Water
- 3 nos Onion — chopped
- 1 handful Curry leaves
- 1/2 tsp Turmeric powder
- 1 tsp Chilly powder
- Asafoetida powder A pinch podi (kayam)
- Salt, to taste
- Mustard seeds A pinch, kaduku
Preparation
Step 1
Pour water in a vessel and add cleaned rice.
Step 2
Cover with a lid and Let it cook for 10 minutes in light medium flame until done. Keep the cooked rice aside.
Step 3
Warm the oil in a pan and crackle mustard seeds. When mustard crackles, add onion and curry leaves. cook for sometime in low heat. 4)Add potato cubes, little water for boiling potatoes and required salt. 5)When the potato cubes are cooked, add turmeric powder, chilly powder and asafoetida powder.
Step 4
Simmer until water dries up completely.
Step 5
Stir in cooked rice and Stir everything together thoroughly.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
