Potato Masala Curry - Spicy
Cooked low and slow until the masala melds into the gravy, this potato curry carries the unmistakable warmth of Kerala spices — black pepper, curry leaves, and coconut. Pair it with steaming rice and a crisp pappadam.

- Tomato : 2 nos
- Ginger : 1 piece
- Garlic : 4 cloves
- Fennel seeds : ¼ tsp
- Cumin seeds : ¼ tsp
- Chilli powder : 1 tsp
- Turmeric powder : ½ tsp
- Coriander powder : 2 tsp
- Salt : as req
Preparation
Step 1
Add little oil in a pan, fry ½ of onion, ginger, garlic and 1 green chilly.
Step 2
When onion has softened, remove from fire and grind it.3) In pan, heat little oil, fry the onion, tomato, green chillies. Add the ground masala and cook it, stirring again.
Step 3
Add turmeric, chilli powder and coriander powder.
Step 4
Add the coconut paste and Stir everything together thoroughly. Let the oil clear on top.6) Add the chopped potatoes and water. Put the lid on and cook the potatoes.7) Spicy potato masala curry is ready.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
