Potato Fry (Turmeric Potato Fry_
Pan-fried until the edges go dark and crispy, this potato fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 4 nos Potato peeled and — cut into thin sticks, big
- 6 nos Green chillies — chopped
- 1/2 - Turmeric powder
- 10 - Curry leaves
- Salt, to taste
- 2 tbsp Coconut oil
Preparation
Step 1
Preparation Method of Potato Fry: 1)Heat the oil in a pan.
Step 2
Add potatoes, chillies, curry leaves, turmeric and salt.
Step 3
Keep on low fire closed with a lid for 5 - 8 minutes.
Step 4
Get the lid off and cook on high fire till some potatos go light brown.
Step 5
It will stick to pan so scrape and cook well.
Step 6
Potato Fry is ready.
Step 7
Serve Potato Fry with rice or chappati as side dish.
Step 8
You can add small onions as whole too. Excellent dish- loved by kids and easy to make- can be taken in lunch boxes!.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
