Potato Fingers | Simple Party Starter
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 2 nos Potato Large and boiled
- 1/2 cup Semolina/Rava
- 1 cup Water
- 1/2 tsp Red chilli powder
- 1/4 tsp Turmeric powder
- 2 tbsp Coriander leaves — chopped
- 1 nos Green chilly — thinly sliced
- 1 tsp Garlic — thinly sliced
- For frying Oil
- Salt, to taste
Preparation
Step 1
Heat 1 cup water with required salt in a pan and let it boil on high heat. Once the water comes to a boil, keeping the flame on medium start, add rava slowly, stirring continuously with the other hand.
Step 2
This helps to prevent any lumps formation and rava absorbs water. Let it cook until it turns thick and dense in consistency.
Step 3
Cover and simmer on low heat for 2 minutes or till rava is cooked well. After this turn off the heat and keep covered for 2 to 3 minutes. The semolina will puff up.
Step 4
Meanwhile, take a bowl and mash the boiled potatoes. Make sure there are no lumps.
Step 5
Stir in the puffed semolina, green chilies, coriander leaves, red chilly powder, turmeric powder and salt.
Step 6
Stir everything together thoroughly so all ingredients infuse well together. Ready the mixture into a dough.
Step 7
To make crispy fingers, grease your hand with oil. Lift a small lump from the dough. First, bind it a bit. Make a cylindrical shape to a finger length. Prepare all the fingers like this. Add oil in a pan and heat. Check if the oil is medium hot. Put the finger to fry. Keep the flame medium. Make sure you put them to fry one by one.Give it a stir now and then and fry till the potato fingers turn crispy and golden brown.
Step 8
Steaming hot and crispy potato finger is ready to be relished. Relish the snacks during the evenings. It can be served as a starter at any party.
Tip
Coconut oil is the default cooking fat in Kerala kitchens. It adds a depth of flavour that other oils simply cannot match in these recipes.
