Potato Coconut Masala
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.

- Potato : 3 nos (chopped
- Onion : 1 no (big
- Green chillies : 4 nos (slit
- Tomato : 2 nos (slices
- Ginger : 2 tsp (crushed
- Garlic : 3 cloves (crushed
- Chilly powder : 2 tsp
- Coriander powder : 1 tsp
- Turmeric powder : 1 tsp
- Coconut : 1 cup (grated
- Garam masala : 1 tsp
- Salt, to taste
Preparation
Step 1
Peel and chop the potatoes.
Step 2
In a pressure cooker, heat oil. Add garam masala, onion and fry it. Add ginger, garlic, chillies and tomato.
Step 3
Make the mixture smooth. Meanwhile, grind coconut into paste.4) Add turmeric, chilly powder, coriander and salt. 5) Add potato and fry for 2 minutes. 6) Add the coconut paste and Stir everything together thoroughly.7) Add little water, Put the lid on and cook the masala.
Step 4
When done, make it a semi thick masala.9) Naadan potato coconut masala.
