Potato Baji
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.

- Potatoes (cut in to cubes
- Chilies
- Chillie powder
- Coriander powder
- Turmeric powder
- Salt
- Oil
- Mustard seeds
- Cumin seeds
- Curry leaves
- Whole dried red chilies
Preparation
Step 1
Get a pressure cooker put the cubes of potatoes in to the cooker add water :- not too much just enough for the baji to not be dry).
Step 2
Add chilli powder, coriander powder, turmeric powder. :- Put a little extra turmeric powder, but don`t put too much just enough for a yellow color.
Step 3
Add salt and chilies.
Step 4
Let it cook for approximately 5wistles (depending on the pressure cooker).
Step 5
Get that baji out and drain any exces water.
Step 6
Pour oil into a pan and heat it.
Step 7
Add spluter musted seeds and cumin seeds together.
Step 8
Add cury leaves red chilies and cook the whole thing till the red chillie puffs up a little and the color changes.
Step 9
Add this mixture to the presure cooked baji and add a little coconut oil (optional).
Step 10
You can add a little turmeric powder if the baji does not have the yellow color and always adjust salt.
Tip
