Potato And Cauliflower Fry
Slow-roasted in coconut oil with a generous hand of spices, this potato fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 2 nos Potato cubes
- 1 cup Cauliflower florets
- 1 nos Onion — chopped
- 3 nos Green chillies
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- 2 tsp Coriander powder
- Salt, to taste
- 1 piece Ginger — chopped
Preparation
Step 1
For preparing potato and cauliflower fry, first cook potato and cauliflower with salt.
Step 2
Crush onion, green chillies and ginger.
Step 3
Heat oil, fry the crushed onion, chilly, turmeric and coriander. Add the vegetables and fry again until done.
Step 4
Potato and cauliflower fry is ready.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
