Pork Peralan
A pork dish, very popular in Kerala Cuisine. The thick spicy gravy of the Pork Peralan is unique and special. The color, texture and aroma of the pork dish looks so exciting and absolutely tempting.
Ingredientsfor 5 servings
- 2 Lbs Pork
- 6 tsp Coriander powder
- 1 tbsp Chilli powder
- 1/2 tsp Cumin seeds (Jeerakam)
- 2 tsp Garlic
- 3 tsp Ginger
- 1/2 cup Button onions (Kunjulli)
- 1.5 cup Tomato pieces
- 2.5 cup Onion — sliced
- 1 tsp Vinegar
- 1/2 tsp Sugar
- 2 Oz Dalda
Preparation
Step 1
For preparing the delicious pork peralan dish, first cut the pork into pieces and cook in salted water.
Step 2
Grind coriander, chilli powder and cumin seeds together.
Step 3
Grind the garlic, button onions and ginger together.
Step 4
Fry the sliced onions in dalda till golden brown.
Step 5
Add the ginger-garlic-button onion paste first and then add the other paste.
Step 6
Fry well till the mixture is a bit browned. Now add the tomatoes.
Step 7
Continue fry in medium flame till the tomatoes are completely mashed. When the liquid from it dries up, add the cooked meat, vinegar and sugar.
Step 8
Stir everything together thoroughly, add required water and boil.
Step 9
When the gravy is thick, remove from fire. The spicy dish is ready.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
