Pork Fry - Pork Ularthiyathu
A popular dish, especially in Thrissur. Pork cuts slow roasted and fried with essential spicy ingredients is one of the favorite non-vegetarian dishes that will turn heads.
Ingredientsfor 4 servings
- 1/2 kg Pork
- 2 nos Onion — sliced
- 2 nos Green chillies — finely chopped
- 1 piece Ginger — crushed
- 4 Cloves garlic — crushed
- 1/4 tsp Turmeric powder
- 11/2 tsp Chilly powder
- 1/2 tsp Coriander powder
- 1 tsp Meat masala — optional
- Fennel A pinch (Perumjeerakam)
- 1 piece Cinnamon stick Karuvapatta
- 3 nos Cloves (Grambu)
- 1 nos Star aniseed Thakollam
- 2 nos Cardamom (Elakka)
- Black pepper, a few
- Curry leaves, a few
- Salt, to taste
- 2 nos Dry red chillies
- 1 tsp Mustard seeds
- 10 nos Shallots (Kunjulli)
- 3 tsp Oil
Preparation
Step 1
Roast fennel, cinnamon, cloves, star aniseed, cardamom and black pepper till the aroma comes. Grind to a powder.
Step 2
Marinate pork with the ingredients: onion, green chillies, ginger, garlic, turmeric powder, chilly powder, coriander powder, meat masala(optional) and the ground spices powder for 30 minutes.
Step 3
Cook it with enough water until all the water gets evaporated. Heat the oil in another pan, add mustard seeds, dry red chillies, shallots and cook well until shallots become golden brown.
Step 4
Add cooked pork to the pan and fry well till pork gets dark color. Serve Pork Fry - Pork Ularthiyathu hot.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
