Pork Curry
This homestyle pork curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 3 servings
- 2 Lb Pork
- 3 nos Onions — finely chopped
- 15 nos Dry red chillies (Kollamulaku)
- 5 tsp Coconut oil
- 5 nos Garlic pods
- 3 tsp Soy sauce
- Salt, to taste
Preparation
Step 1
Chop the pork into small pieces.
Step 2
Mix it with soy sauce and salt and keep it for about 30 minutes.
Step 3
Fry the onions, till they become brown in colour.
Step 4
Pre-heat oven to 350 degree and keep the red chillies covered in aluminium foil for about 10 minutes.
Step 5
Grind the red chillies, fried onions, and garlic to a fine paste.
Step 6
Add the paste to the pork and Stir everything together thoroughly.
Step 7
Pressure cook it upto 2 whistles.
Step 8
Remove the lid and boil it for some more time, till the Pork Curry gravy is thick.
Step 9
Pork Curry is ready.
Step 10
Serve Pork Curry with rice or boiled tapioca.

The Pork Curry.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
