Podi Sambar - Brahmin Special
Tuvar dal, ladies finger, carrot and other ingredients are cooked with tuvar dal to make podi sambar.
Ingredientsfor 4 servings
- 3 cup Tuvar dal
- 5 nos Ladies finger — sliced
- 1 nos Radish — sliced
- 1 nos Carrot — sliced
- 100 g Pumpkin — sliced
- 2 nos Onion
- 1 nos Potato — sliced
- 1 tsp Turmeric powder
- 4 tbsp Sambar powder
- 1 tbsp Red chilly powder
- Asafoetida A pinch (Kayam)
- 2 tsp Mustard seeds
- Tamarind lemon size
- 2 tsp Ghee
- Salt, to taste
Preparation
Step 1
For preparing podi sambar - brahmin special, wash tuvar dal and boil it with 4 cups of water with a pinch of turmeric powder in pressure cooker.
Step 2
Soak tamarind in water and squeeze it out.
Step 3
Fry vegetables 2 to 7 (from ladies finger to Potato) in ghee.
Step 4
Next, add fried items to tamarind water and boil for a few minutes.
Step 5
While boiling, add sambar powder, red chilly powder and salt.
Step 6
Add the boiled tuvar dal(item 1) to this mixture and keep boiling for few minutes.
Step 7
Add asafoetida.
Step 8
Fry mustard seeds in coconut oil and add to this mixture.
Step 9
Add curry leaves. Podi sambar - brahmin special recipe, is ready.
Tip
Add the tempering last and let the sambar rest for 5 minutes after. The flavours need a moment to settle.
