Pineapple Relish
Sweet and spicy dish with dried fruits like papaya,ginger and strawberries.
Ingredientsfor 4 servings
- 1 nos Fresh pineapple Finley — chopped
- 1 tbsp Fresh ginger — crushed
- 1 tsp Dried chilly crushed - cut down if you want it less spicy
- 1 tsp Cumin seeds
- 1 tbsp Pomegranate molasses
- 1/2 cup Dried papaya, strawberry, ginger
- 1/2 cup Sugar
- 1/2 cup Pineapple /orange juice
- Salt, to taste
- Oil — for cooking
Preparation
Step 1
Heat the oil in a medium pan, add cumin seeds, when it crackle add ginger and stir fry.
Step 2
Add dry crushed chillies and fry briefly till aromatic.
Step 3
Stir in pineapple pieces, fruit juice, molasses sugar, dried fruits and salt.
Step 4
Bring to a rolling boil and then lower the heat and let it simmer for 20 minutes with out a lid.
Step 5
When the syrup is coated with the fruits, remove from fire. :- Pineapple Relish is ready! :- Cool the Pineapple Relish and serve with pulao or biriyani!
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
