Pineapple Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 5 servings
- 1 kg Pineapple
- 1 tbsp Sesame oil
- 50 g Green chillies
- 50 g Garlic
- 25 g Ginger
- 3 tsp Chilly powder
- Turmeric powder A pinch
- 1 tsp Asafetida (Kayam)
- 2 tbsp Vinegar
Preparation
Step 1
For preparing pineapple pickle, first apply salt on the pineapple and set aside for 30 min.
Step 2
Fry green chillies and garlic in oil and take it off the heat.
Step 3
Then fry ginger, chilly powder, turmeric powder and asafetida. give it a good stir.
Step 4
Next, add vinegar and pineapple pieces to it and mix all the ingredients well.
Step 5
Pineapple pickle is ready, convert it to a bottle and use it when required.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
